Maria Hernandez, from Colombia, and Andrés Hoyos-Gomez, a former McKinsey consultant, built The Beans on Fire as a collaborative roastery: a professional roasting floor that more than thirty independent roasters share, so small brands can roast without buying a machine, and the café at the front sells what comes off it. The original faces Square Gardette in the 11th, a corner room with tables outside on the square, and two more have followed in Montmartre and on Boulevard de Strasbourg.

The bags on the shelf change with whoever roasted that week, which is the point, and green coffee is sold too. Open every day, from eight on weekdays.
