Terres de Café

Christophe Servell founded Terres de Café in 2009, years before specialty coffee had a French vocabulary, after travelling to origin to source lots himself, and the company has been counted among the country's best roasters since 2017. It now runs nine bars across Paris plus outposts in Belgium and South Korea, but the Blancs Manteaux shop in the Marais is the historic boutique, the address the house itself points to as where it started.
The range is the draw: a broad list of traceable coffees from approachable everyday options up to unusual and competition grade lots, poured as espresso and filter and sold by the bag. Visitors tend to end up at the Saint-Honoré branch near the Louvre, which opens at eight; the Marais original keeps slightly shorter hours and closes on Mondays.
