Panas, until recently called Nomade, is the Paris café of a specialty roaster whose workshop is in Brittany, and the beans reach Rue Paul Bert within 48 hours of roasting. The menu is espresso, milk drinks and filter, V60 and other gentle methods, each pour built around the origin, variety and process of the lot rather than a house style, and the filter is priced low enough, around two and a half euros, that it is the drink most regulars order. Oat milk is on.

It sits on the short street of Paul Bert, better known for its bistros, in the part of the 11th between Faidherbe and Charonne that still sees relatively few coffee regulars. Open every day, from eight on weekdays.
