Belleville Brûlerie, the roastery founded in 2013 by Thomas Lehoux, David Flynn and Anselme Blayney, three of the people who built Paris specialty coffee, took over a 1908 corner café on Rue Juliette Dodu in spring 2016 and left it looking like one: zinc, tiles, a terrace, a croque monsieur and jambon beurre the owners will tell you are the best in the city. The difference is the coffee, Belleville's own roasts on the machine, which turns a classic Parisian bar into the easiest way to drink one of the city's reference roasters without a trip to the Saturday open house at the roastery up the hill.
It runs all day into the evening, coffee giving way to wine and beer, with jazz on Saturday nights. New managers have taken over the day to day but the coffee and the concept are unchanged.
