Yuichiro Sugiyama was a barista at Boot Café before he and Yui Matsuzaki opened this sliver of a room on Rue Amelot in 2019, and the split has held ever since: he does the coffee, she does the baking. The beans come from Scandinavian roasters, Prolog, April and La Cabra among them, brewed light and clean, and the pastry case is what turns a queue into a line down the street, fig financiers, apple pie, chestnut cake, banana bread and a Japanese style purin, all made that morning from what the local markets had.
It is a studio more than a cafe, a handful of seats and no room for laptops, open from half eight until four and closed Sundays. Two later branches on Rue Perrée in the 3rd and Rue Coquillière in the 1st take some of the pressure off, but Amelot is the original and still the one people mean.
