Charles and Raphaël Corot, two brothers, built Café Nuances into the rare Paris specialty roaster with a proper footprint: four shops, this one in the golden triangle off the Champs-Élysées where serious coffee is otherwise nonexistent, and the coffee roasted in their own workshop from traceable lots. The rooms are designed to be looked at, the third branch by the studio Uchronia, and the brand leans into the sensory, with tasting notes on the cups and a lot of attention to how the drink arrives.

Open seven days, eight to seven on weekdays, which in the 8th makes it the reliable choice as much as the good one. The Francs-Bourgeois branch is the one to know if you are in the Marais.
