Hibi Kaffe

Hibi Kaffe is a small roastery founded by Aya, who moved to Norway from Japan in 2013 and launched the brand in November 2024 under the same roof as The Little Pickle, a Michelin guide restaurant straddling Tøyen and Grünerløkka. Hibi means daily in Japanese, a reminder to notice an ordinary cup rather than let it pass unremarked, and Aya has since brought on an employee to help roast, pack, and sell each batch.
The Little Pickle's own bakery, opened in January 2025, serves sourdough alongside coffee brewed entirely from Hibi's roasts, and Aya herself placed second in the 2026 Norwegian Coffee Roasting Championship. Limited opening windows through the week reflect the scale of a small operation rather than a lack of demand.
