Sisu opened near the Darsena in spring 2024, the second project from Alessandro Sanso, Giuseppe Gallello, and Silvia Dell'Acqua, who had already built a following with their Milan pastry shop Gelsomina. The name borrows a Finnish word for quiet perseverance, and the trio built the corner site around that idea, nine street facing windows, a main hall opening onto a smaller hidden room, and an outdoor area that fills up once the weather turns.

The coffee counter rotates through small specialty roasters rather than locking into one exclusive supplier, running single origin options alongside a steadier house blend for anyone who wants consistency. The bakery case leans international, viennoiserie, babka, and New York style cheesecake sit next to more familiar cinnamon rolls, with vegan and gluten free options built into the regular lineup rather than treated as an afterthought. A second Sisu has since opened on Via Nirone, but the Gaudenzio Ferrari original remains the address most tied to the brand, open seven days a week into the evening.
