Yellow Bird roasts on a Giesen W15A the staff have nicknamed Baronessen, a few times a week to keep the bags moving fast, and buys most of its green coffee directly from the farms rather than through a chain of importers, visiting the growers in person as part of choosing each lot. The light roasted microlots rotate several times a year, moving between floral and fruity profiles and darker, tropical, more acidic ones as new harvests come in, each cupping tested before it goes on the shelf. A coffee subscription service ships the same beans nationwide, alongside training and support for cafes and restaurants that want to pour Yellow Bird themselves.

The coffee bar itself sits right on Amager Strandvej facing the beach, a proper sea view rather than a courtyard glimpse, with the roastery and wholesale operation based separately at Hammerholmen. Regulars use the counter as a quiet weekday work spot, laptops out over a flat white with the beach mostly to themselves once the morning rush clears, and the espresso and grinder sit in full view of the retail shelves so the two sides of the business are never far apart.
