Cabin opened in December 2025 from the team behind the natural wine bar Bar Vitrine, and it is the only coffee bar in Copenhagen with a continuous pour of Tim Wendelboe, the Oslo roaster whose name carries serious weight among people who take their sourcing seriously. Head barista Jun Nishimura brings years of experience from Japan's specialty coffee scene to a short menu built around that single roaster rather than a rotating cast, so the coffee itself sets the pace instead of a long list of options. The kitchen runs a small plates breakfast and lunch menu alongside it, unusual dishes like tapioca khichdi and semolina crepe rather than the standard Danish pastry case.
The design, a collaboration with the Danish brand FRAMA, wraps the whole room in pale pine paneling with built in benches and pewter tableware, a calm, almost sauna like hush that stands out from the stone and glass of Store Kongensgade outside. It is a small space, seats fill fast on weekday mornings, and several visitors describe portions as delicate rather than filling, so it reads more as a considered stop for excellent coffee than a place to plan a full sit down meal around.
