Anargyros Fakos, Greece's 2024 national roasting champion, runs Darg out of a small room on Evridamantos in Petralona, roasting in house on an unusual Silon ZR7 that gives him wide control over airflow and drum temperature through the roast. He protects the natural sweetness of light to medium profiles rather than pushing toward the darker roasts still common around the city, and single farm lots from Guatemala, Colombia, and Rwanda rotate through the grinders in small batches with roast dates printed on every bag.

The room reads more like a listening bar than a typical Athens cafe, dark walls, collage covered surfaces, and a personal vinyl collection on permanent display rather than the white tile and marble common to the city's newer shops. Cold brew batches and seasonal single origin releases move fast enough that regulars check Instagram before visiting, and the shop backs its coffee program with direct relationships to the specific farms behind each release rather than buying through a broker.
