Monks Coffee Roasters

Patrick Abbott, an Irishman with no hospitality background before he got into coffee, opened Monks Coffee Roasters in 2016 in a warehouse unit out past Sloterdijk, and the business has stayed roastery first ever since. A Probat drum roaster turns out weekly batches for retail bags, for wholesale accounts around the Netherlands, and for the small cafe counter on site, with house blends such as Monks Cafe Blend and Saints and Sinners built around milk chocolate and red fruit or dark chocolate and grapefruit notes.
Because roasting and wholesale come first, the cafe side keeps shorter hours than a typical all day coffee bar rather than trying to be both at once. Monks runs its own barista and latte art courses on the same floor as the roaster, so the room doubles as a working classroom as often as it works as a cafe, and coffee goes out bagged for home brewing or by subscription alongside the cups poured on site.
