Haku was started by two lifelong Amsterdammers who left careers in law to chase a shared interest in roasting and brewing, turning what began as a hobby into a fully independent, family run coffee bar on Rozengracht in the Jordaan. The beans are roasted in house and the selection changes with the seasons, with a filter and espresso menu built around clean, bright profiles rather than one fixed house style.

Haku is also one of the few places in Amsterdam pouring ceremonial grade matcha prepared with real attention to Japanese tradition, served right alongside the coffee. Every few months the shop rotates in new work from local ceramic artists, so the mugs people drink from keep changing along with the beans. A short walk from the Anne Frank House, it draws a steady mix of Jordaan regulars and passing visitors, held together by a calm, unhurried service style that the neighborhood has come to rely on.
